Methioninsulfoximid er et derivat af aminosyren methionin. Methioninsulfoximid er fundet i brød bagt af mel der er behandlet med melblegningsmidlet nitrogentrichlorid. Methioninsulfoximid og dens analoger hæmmer enzymet glutaminsyntetase hvorved syntesen af aminosyren glutamin forstyrres, da glutamin er en neurotransmitter kan det forklare hvorfor methioninsulfoximid kan inducere kramper (Griffith and Meister 1978).
